Wednesday’s French Countryside Box: 10/1/25

This week, our Smart Balance Lunch Box takes inspiration from the French countryside. The centerpiece is a classic Coq au Vin — chicken braised slowly in red wine — a rustic dish that has been loved in French homes for centuries.

Coq au Vin 
Traditionally, Coq au Vin was made with an old barnyard rooster and plenty of bacon fat. We gave it a homestead twist to make it healthier and perfect for a balanced lunch box:
  • Chicken thighs (boneless, skinless) for lean protein
  • Mushrooms, carrots, onions, and potatoes for earthy sweetness and heartiness
  • Red wine, beef stock, and a touch of tomato paste for a rich, deep sauce
  • Fresh thyme and bay leaf for gentle herbal notes
  • A splash of white balsamic vinegar and a little sugar to balance the wine
  • Finished with butter for silky texture, and a touch of cornstarch to give the sauce a glossy finish that holds beautifully in your lunch box
This dish is lighter than the traditional version (no heavy bacon, no skin-on cuts) but still has all the depth and comfort you expect.

Honey-Glazed Sweet Potatoes with Sage
We swapped out the usual mashed potatoes for a seasonal, colorful side:
  • Sweet potatoes, skins on (for extra fiber and nutrients)
  • Tossed with honey, butter, and fresh sage from our garden
  • Roasted until caramelized and finished with a touch of vinegar to balance sweetness
This side brings natural sweetness and bright autumn color to your plate — and doubles as your “sweet bite.”

Fresh-Baked Baguette & Gruyère Cheese
No French meal feels complete without bread and cheese. We baked fresh baguettes in-house, then paired them with slices of Gruyère, a nutty, buttery cheese from the Alpine region of France.
Fun Fact: Gruyère is the classic cheese used in French onion soup — it melts beautifully and has a savory, nutty flavor that pairs perfectly with wine-braised dishes like Coq au Vin.

A Fresh Finish
To brighten the box, we added a simple garnish: a fresh strawberry. It adds a pop of color, a touch of sweetness, and balances the richness of the stew and cheese.

Chef’s Note
French cuisine is all about letting the ingredients speak for themselves. While the past few Wednesdays leaned on spice and herb-heavy flavors, this week we went the opposite direction — clean, simple layers where every ingredient shines.
This is how I love to present farm-to-table cooking: take what’s seasonal, prepare it with care, and let the natural flavors tell the story.
For this Coq au Vin, I used Pinot Noir red wine to bring a touch of luxury to our fall lunch box. And the Gruyère cheese is purposely cut as a block, so you can enjoy it your way — grate it over the stew, toast it on bread, or slice it thin. However you choose, it’s a taste of rustic France, right here at home.
