This week, our Smart Balance Lunch Box travels to the heart of France — where rustic cooking and farm-fresh ingredients create timeless comfort.
The French Countryside Box brings back one of our most-loved menus, featuring Coq au Vin, French Herbed Brown Rice Pilaf, and Vanilla Yogurt with Mixed Berry Sauce — a meal designed to nourish both body and soul. Coq au Vin is France’s answer to comfort food. We slow-braise tender chicken thighs in red wine with carrots, onions, potatoes, and a touch of mushrooms. The long, gentle cooking process infuses every bite with rich flavor while keeping the meat moist and tender. Onions and carrots add natural sweetness, while the wine and herbs create a deep, savory sauce that feels indulgent but remains surprisingly balanced in fat and sodium. For the side, we’re debuting our new French Herbed Brown Rice Pilaf. Brown rice is one of nature’s best slow-burning fuels — a whole grain packed with fiber, magnesium, and B-vitamins that help regulate blood sugar and support steady energy throughout the day. We gently toast the rice with onions, celery, garlic, and a blend of thyme and bay leaves in a little butter and olive oil. To finish the meal, we add a touch of light sweetness with Vanilla Yogurt topped with Mixed Berry Sauce.
