Wednesday’s French Countryside Box: 10/1/25

This week, our Smart Balance Lunch Box takes inspiration from the French countryside. The centerpiece is a classic Coq au Vin — chicken braised slowly in red wine — a rustic dish that has been loved in French homes for centuries.

Coq au Vin 
Traditionally, Coq au Vin was made with an old barnyard rooster and plenty of bacon fat. We gave it a homestead twist to make it healthier and perfect for a balanced lunch box:
  • Chicken thighs (boneless, skinless) for lean protein
  • Mushrooms, carrots, onions, and potatoes for earthy sweetness and heartiness
  • Red wine, beef stock, and a touch of tomato paste for a rich, deep sauce
  • Fresh thyme and bay leaf for gentle herbal notes
  • A splash of white balsamic vinegar and a little sugar to balance the wine
  • Finished with butter for silky texture, and a touch of cornstarch to give the sauce a glossy finish that holds beautifully in your lunch box
This dish is lighter than the traditional version (no heavy bacon, no skin-on cuts) but still has all the depth and comfort you expect.

Honey-Glazed Sweet Potatoes with Sage
We swapped out the usual mashed potatoes for a seasonal, colorful side:
  • Sweet potatoes, skins on (for extra fiber and nutrients)
  • Tossed with honey, butter, and fresh sage from our garden
  • Roasted until caramelized and finished with a touch of vinegar to balance sweetness
This side brings natural sweetness and bright autumn color to your plate — and doubles as your “sweet bite.”

Fresh-Baked Baguette & Gruyère Cheese
No French meal feels complete without bread and cheese. We baked fresh baguettes in-house, then paired them with slices of Gruyère, a nutty, buttery cheese from the Alpine region of France.
Fun Fact: Gruyère is the classic cheese used in French onion soup — it melts beautifully and has a savory, nutty flavor that pairs perfectly with wine-braised dishes like Coq au Vin.

A Fresh Finish
To brighten the box, we added a simple garnish: a fresh strawberry. It adds a pop of color, a touch of sweetness, and balances the richness of the stew and cheese.

Chef’s Note
French cuisine is all about letting the ingredients speak for themselves. While the past few Wednesdays leaned on spice and herb-heavy flavors, this week we went the opposite direction — clean, simple layers where every ingredient shines.
This is how I love to present farm-to-table cooking: take what’s seasonal, prepare it with care, and let the natural flavors tell the story.
For this Coq au Vin, I used Pinot Noir red wine to bring a touch of luxury to our fall lunch box. And the Gruyère cheese is purposely cut as a block, so you can enjoy it your way — grate it over the stew, toast it on bread, or slice it thin. However you choose, it’s a taste of rustic France, right here at home.

Smart Balance Lunch Box
At Self Mayed Homestead, we believe healthy food should taste amazing, feel comforting, and still celebrate balance. That’s exactly why this week’s Smart Balance Lunch Box is themed Flavors of the Mediterranean — a menu inspired by the sunshine, spices, and freshness of one of the world’s most celebrated cuisines.

🍗 Shawarma-Style Grilled Chicken: Our protein centerpiece features tender cubes of chicken thigh marinated in olive oil, lemon juice, garlic, and warm Mediterranean spices like cumin, coriander, paprika, and cinnamon. Grilled until smoky and charred, it brings that irresistible street-food flavor right to your lunch box.

🍚 Savory Couscous Salad: Instead of heavy sides, we pair the chicken with a light, refreshing couscous salad. Sautéed onion and garlic build the base, with raisins adding sweetness, and fresh cucumber, cherry tomatoes, and carrots for crunch. A dash of lemon ties it all together — fluffy, flavorful, and perfectly balanced.

💡 Fun Fact: Even though it looks like a grain, couscous is actually a type of tiny pasta made from semolina wheat. It’s been a staple in North African cuisine for centuries and is often served at celebrations as a symbol of abundance and hospitality.

🥕 Roasted Vegetable Medley: To showcase the best of the season, we’re roasting golden beets, turnips, homegrown peppers, and red onions with a sprinkle of Middle Eastern spices. Roasting brings out their natural sweetness, adds smoky depth, and creates a colorful, hearty side that pairs beautifully with the couscous and chicken.

🥒 Pickled Vegetable Medley: Every Mediterranean meal deserves a little tang. Our house-pickled beets, turnips, cauliflower, peppers create a rainbow of colors and flavors. They’re crunchy, vibrant, and brighten the whole plate with their zesty flavor.

💡 Fun Fact: In the Middle East, pickled turnips are a must-have on the table. Their bright pink color often comes from adding beets to the brine — not only pretty, but also a tradition that dates back generations as a way to preserve harvest vegetables.

🍎 Roasted Apples with Orange–Cinnamon–Cardamom Syrup: For dessert, we highlight the season with locally sourced apples, roasted until caramelized and finished with a spiced citrus syrup. It’s sweet, fragrant, and a lighter way to end the meal without overloading on sugar.

🥛 Yogurt–Lemon–Dill Sauce (on the side): Cool, creamy, and zesty — the optional yogurt sauce is perfect for dipping your chicken or drizzling over the couscous.

This week’s Buckwheat Festival Edition Lunch Box is the perfect example — a plate that celebrates fall flavors, keeps balance in mind, and still delivers that homestyle satisfaction we’re known for.

The Star: Tandoori ChickenTender boneless chicken thighs are marinated in yogurt, lemon, garlic, ginger, and warm spices, then roasted to perfection. The yogurt keeps the chicken juicy, while turmeric, cumin, and smoked paprika bring smoky depth and golden color.
